Carrot Ginger Miso Dressing

I could eat this dressing on anything breakfast, lunch, and dinner!!

Ingredients

  • 1 large carrot, roughly chopped
  • 2 Tablespoons ginger, roughly chopped
  • 1 Tablespoon sweet white miso
  • 1/4 of a small red onion, roughly chopped
  • 2 Tablespoons of water
  • 2 Tablespoons of rice vinegar
  • 1/4 cup of grapeseed oil
  • 2 Tablespoons of sesame seed oil

Make the Dressing

In a blender, blend together the carrot, ginger, miso, onion, water, and vinegar. With the motor running, slowly drizzle in the oils. Blend until well combined.

Use immediately or cover and store up to 3 days in an airtight container.
