Petite Ham & Spinach Quiche

This is a recipe I’ve developed, largely inspired by a recipe off Allrecipes.com. Most of the credit goes to that recipe, and I have only slightly modified it (by replacing bacon with ham & spinach). The original recipe calls for a 9x13 inch baking dish, though I’ve found that the same ingredient amounts work in two of the dishes pictured. The dish I use is about 6 inches in diameter and about 1.5 inches deep.
Ingredients
- 4 ounces shredded swiss cheese
- 2 tablespoons melted butter or margerine
- 4 beaten eggs
- 1/4 cup finely chopped onions
- 1 teaspoon salt
- 1/2 cup all-purpose flour
- 1 1/2 cup milk
- 1/2 cup cubed ham
- 1/2 cup cooked spinach

Pre-heat the oven
Preheat oven to 350º F (175º C). Lightly grease baking dish(es) with butter or margerine.

Sauté the ham
Thinly coat the bottom of a skillet with Olive Oil. Pre-heat the skillet and add the ham. Sauté until ham is golden brown. Remove from heat & set ham aside.

Prepare mixture
Combine eggs, butter, onion, salt, flour and milk in a mixing bowl; whisk together until smooth.

Fill baking dish
Line bottom of baking dish with ham, spinach and cheese. Pour mixture over the ham, spinach and cheese.

Bake & serve
Baking in preheated oven for 45 minutes to an hour, until set. Serve hot or cold. Optionally top with some shredded (extra) sharp cheddar cheese to add some additional color & flavor.
Baking time can vary greatly depending on the oven, and the depth of the baking dish. I have made this recipe in a full 9" quiche dish as well, with no adjustment to the amounts. I’ve not quite narrowed down the measurements for the ham & spinach, so vary to taste.
