BBQ Pulled Chicken

I receive a lot of whole chickens in my meat CSA so this was an attempt to find something new to do with the chickens. The sauce is a nice balance of spicy and sweet. Use 2 chipotles for more spice. I think the dry ground mustard adds the best flavor, but prepared mustard will also work.

I love Tilapia. Even though I lived in Hawaii for a short time, and got to see Tilapia in its native habitat, Im still brave enough to eat it. The thing I love about it is that its sort of neutral. I mean its fishy enough to be easily identified, but its not so overpowering that it will dominate a fusion style dish. Paired with cumin spiced, pan seared mashed potatoes, pancetta, white beans, mushrooms, on a bed of spinach, with a squeeze of lemon, this is over the top.
